Polish yeast pancakes with thin apple slices folded into the dough, fried until puffed and finished with powdered sugar.

Ingredients

  • 2 cups all-purpose flour
  • 1 tsp instant yeast
  • 2 tbsp granulated sugar
  • 1/2 tsp kosher salt
  • 1 cup warm milk
  • 1 egg
  • 1 large apple, peeled and thinly sliced
  • 1/4 cup neutral oil
  • 2 tbsp powdered sugar

Directions

  1. 1Mix flour, yeast, sugar, and salt; whisk in warm milk and egg until a thick, sticky batter forms.
  2. 2Cover the yeast batter and let it rise 45 minutes, until visibly bubbly and expanded.
  3. 3Fold the apple slices gently through the risen batter without knocking out all the air.
  4. 4Heat 1 tablespoon neutral oil in a skillet over medium and drop in 1/4-cup portions of apple batter.
  5. 5Cook the apple pancakes 2–3 minutes per side until puffed and golden; add neutral oil between batches as needed.
  6. 6Dust the warm racuchy with powdered sugar before serving.

💡 Do not slice the apple thickly; thin slices soften inside the pancake before the yeast batter browns, while thick pieces can stay crunchy.
