Rad Na Gai

Ingredients
- •8 oz fresh or dried rice noodles
- •1 lb boneless chicken breast, sliced thin
- •2 cups chicken broth
- •3 tbsp soy sauce
- •2 tbsp cornstarch
- •1 tbsp vegetable oil
- •4 cloves garlic, minced
- •1 cup broccoli florets
- •2 tbsp oyster sauce
- •1 tsp white pepper
- •2 scallions, chopped
- •1 tbsp sesame oil
Directions
- 1Cook rice noodles according to package directions, drain, and set aside.
- 2Heat vegetable oil in a wok or large pan over medium-high heat and stir-fry chicken with garlic until cooked through, about 5 minutes.
- 3Add broccoli and cook for 2 minutes until slightly tender.
- 4Mix cornstarch with 3 tablespoons water to create a slurry.
- 5Pour chicken broth, soy sauce, oyster sauce, and cornstarch mixture into the pan, stirring constantly until gravy thickens, about 3 minutes.
- 6Season with white pepper and sesame oil.
- 7Divide cooked noodles among serving bowls and ladle chicken and gravy over top.
- 8Garnish with chopped scallions and serve immediately.
