Ingredients

  • 8 oz fresh or dried rice noodles
  • 1 lb boneless chicken breast, sliced thin
  • 2 cups chicken broth
  • 3 tbsp soy sauce
  • 2 tbsp cornstarch
  • 1 tbsp vegetable oil
  • 4 cloves garlic, minced
  • 1 cup broccoli florets
  • 2 tbsp oyster sauce
  • 1 tsp white pepper
  • 2 scallions, chopped
  • 1 tbsp sesame oil

Directions

  1. 1Cook rice noodles according to package directions, drain, and set aside.
  2. 2Heat vegetable oil in a wok or large pan over medium-high heat and stir-fry chicken with garlic until cooked through, about 5 minutes.
  3. 3Add broccoli and cook for 2 minutes until slightly tender.
  4. 4Mix cornstarch with 3 tablespoons water to create a slurry.
  5. 5Pour chicken broth, soy sauce, oyster sauce, and cornstarch mixture into the pan, stirring constantly until gravy thickens, about 3 minutes.
  6. 6Season with white pepper and sesame oil.
  7. 7Divide cooked noodles among serving bowls and ladle chicken and gravy over top.
  8. 8Garnish with chopped scallions and serve immediately.
