Rad Na Goong

Silky rice noodles topped with succulent shrimp in a savory tapioca gravy sauce.

Ingredients

  • 8 oz fresh rice noodles
  • 1 lb large shrimp, peeled and deveined
  • 2 cups chicken or shrimp stock
  • 3 tbsp tapioca starch
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 2 cloves garlic, minced
  • 1/4 cup white pepper powder
  • 2 tbsp vegetable oil
  • 1/2 cup Chinese broccoli, chopped
  • 2 green onions, sliced

Directions

  1. 1Heat oil in a wok over high heat, add minced garlic and stir-fry until fragrant.
  2. 2Add shrimp and cook until just pink, about 2-3 minutes, then set aside.
  3. 3Pour stock into the wok and bring to a boil, add soy sauce and oyster sauce.
  4. 4Mix tapioca starch with 1/4 cup cold water, then slowly pour into the boiling stock while stirring until the sauce thickens and becomes clear.
  5. 5Add the cooked shrimp and Chinese broccoli back into the gravy, simmer for 2 minutes.
  6. 6Place fresh rice noodles in serving bowls and ladle the shrimp gravy generously over top.
  7. 7Sprinkle with white pepper and green onions before serving.
