Rad Na Goong
Silky rice noodles topped with succulent shrimp in a savory tapioca gravy sauce.

Ingredients
- •8 oz fresh rice noodles
- •1 lb large shrimp, peeled and deveined
- •2 cups chicken or shrimp stock
- •3 tbsp tapioca starch
- •3 tbsp soy sauce
- •1 tbsp oyster sauce
- •2 cloves garlic, minced
- •1/4 cup white pepper powder
- •2 tbsp vegetable oil
- •1/2 cup Chinese broccoli, chopped
- •2 green onions, sliced
Directions
- 1Heat oil in a wok over high heat, add minced garlic and stir-fry until fragrant.
- 2Add shrimp and cook until just pink, about 2-3 minutes, then set aside.
- 3Pour stock into the wok and bring to a boil, add soy sauce and oyster sauce.
- 4Mix tapioca starch with 1/4 cup cold water, then slowly pour into the boiling stock while stirring until the sauce thickens and becomes clear.
- 5Add the cooked shrimp and Chinese broccoli back into the gravy, simmer for 2 minutes.
- 6Place fresh rice noodles in serving bowls and ladle the shrimp gravy generously over top.
- 7Sprinkle with white pepper and green onions before serving.
