Ingredients

  • 2 cups raisins
  • 1 cup water
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup powdered sugar

Directions

  1. 1Preheat oven to 350°F and line a 9x13 inch baking pan with parchment paper.
  2. 2Combine raisins and water in a saucepan, bring to boil, then simmer for 5 minutes. Set aside to cool.
  3. 3Cream butter and sugar until fluffy, then beat in egg. Stir in cooled raisins with their liquid.
  4. 4Whisk together flour, baking soda, salt, cinnamon, and nutmeg, then fold into raisin mixture.
  5. 5Spread batter evenly in prepared pan and bake for 25-30 minutes until a toothpick comes out clean.
  6. 6Cool completely, then dust with powdered sugar and cut into 16 bars.
