Raisin Bars

Ingredients
- •2 cups raisins
- •1 cup water
- •1/2 cup unsalted butter, softened
- •1 cup granulated sugar
- •1 large egg
- •1 3/4 cups all-purpose flour
- •1 teaspoon baking soda
- •1/2 teaspoon salt
- •1/2 teaspoon ground cinnamon
- •1/4 teaspoon ground nutmeg
- •1/2 cup powdered sugar
Directions
- 1Preheat oven to 350°F and line a 9x13 inch baking pan with parchment paper.
- 2Combine raisins and water in a saucepan, bring to boil, then simmer for 5 minutes. Set aside to cool.
- 3Cream butter and sugar until fluffy, then beat in egg. Stir in cooled raisins with their liquid.
- 4Whisk together flour, baking soda, salt, cinnamon, and nutmeg, then fold into raisin mixture.
- 5Spread batter evenly in prepared pan and bake for 25-30 minutes until a toothpick comes out clean.
- 6Cool completely, then dust with powdered sugar and cut into 16 bars.
