Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 teaspoons curry powder
  • 1 teaspoon cumin
  • 1 cup red lentils, rinsed
  • 1 can (14 oz) coconut milk
  • 2 cups vegetable broth
  • 1 can (14 oz) diced tomatoes
  • 2 cups fresh spinach
  • 1 teaspoon salt

Directions

  1. 1Heat olive oil in a large pot over medium heat. Add diced onion and cook for 3-4 minutes until softened.
  2. 2Stir in garlic, ginger, curry powder, and cumin. Cook for 1 minute until fragrant.
  3. 3Add red lentils, coconut milk, vegetable broth, and diced tomatoes with their juice.
  4. 4Bring to a boil, then reduce heat and simmer for 15-18 minutes until lentils are soft and beginning to break down.
  5. 5Stir in fresh spinach and salt, cooking for 2 minutes until spinach wilts.
  6. 6Taste and adjust seasonings as needed. Serve hot with rice or naan bread.
