Red Lentil Curry
A creamy, warming curry made with red lentils, coconut milk, and aromatic spices that comes together in under 30 minutes.

Ingredients
- •2 tablespoons olive oil
- •1 medium onion, diced
- •3 cloves garlic, minced
- •1 tablespoon ginger, minced
- •2 teaspoons curry powder
- •1 teaspoon cumin
- •1 cup red lentils, rinsed
- •1 can (14 oz) coconut milk
- •2 cups vegetable broth
- •1 can (14 oz) diced tomatoes
- •2 cups fresh spinach
- •1 teaspoon salt
Directions
- 1Heat olive oil in a large pot over medium heat. Add diced onion and cook for 3-4 minutes until softened.
- 2Stir in garlic, ginger, curry powder, and cumin. Cook for 1 minute until fragrant.
- 3Add red lentils, coconut milk, vegetable broth, and diced tomatoes with their juice.
- 4Bring to a boil, then reduce heat and simmer for 15-18 minutes until lentils are soft and beginning to break down.
- 5Stir in fresh spinach and salt, cooking for 2 minutes until spinach wilts.
- 6Taste and adjust seasonings as needed. Serve hot with rice or naan bread.
