Ingredients

  • 2.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 tablespoon unsweetened cocoa powder
  • 1/2 cup vegetable oil
  • 1.5 cups granulated sugar
  • 2 large eggs
  • 1 cup buttermilk
  • 1 teaspoon white vinegar
  • 1 teaspoon vanilla extract
  • 1 ounce red food coloring
  • 8 oz cream cheese, softened
  • 1/2 cup butter, softened
  • 3 cups powdered sugar

Directions

  1. 1Preheat oven to 350°F and grease two 9-inch round cake pans.
  2. 2Whisk together flour, baking soda, salt, and cocoa powder in a bowl.
  3. 3Beat oil and sugar together, then add eggs one at a time. Alternate adding flour mixture and buttermilk, then stir in vinegar, vanilla, and food coloring until batter is deep red.
  4. 4Divide batter evenly between pans and bake for 30-35 minutes until a toothpick comes out clean. Cool in pans for 15 minutes, then turn out onto wire racks.
  5. 5Beat cream cheese and butter together until fluffy, then gradually add powdered sugar and beat until smooth.
  6. 6Place one cake layer on a plate, spread frosting on top, then add second layer and frost the top and sides.
