Refried Beans with Tortillas

Ingredients
- •2 tablespoons vegetable oil
- •1 medium onion, diced
- •3 cloves garlic, minced
- •2 cans (15 oz each) pinto beans, undrained
- •1 teaspoon cumin
- •1/2 teaspoon salt
- •1/4 teaspoon black pepper
- •1/2 cup chicken or vegetable broth
- •1/2 cup shredded cheddar cheese
- •8 flour or corn tortillas
- •2 tablespoons fresh cilantro, chopped

Directions
- 1Heat oil in a large skillet over medium heat. Add diced onion and cook for 3-4 minutes until softened.
- 2Stir in minced garlic and cook for 1 minute until fragrant.
- 3Add pinto beans with their liquid, cumin, salt, and pepper to the skillet.
- 4Mash beans with a potato masher or fork until desired consistency is reached, leaving some texture.
- 5Stir in broth and simmer for 5-7 minutes, stirring occasionally, until creamy.
- 6Warm tortillas in a dry skillet or directly over a gas flame for 30 seconds per side.
- 7Transfer beans to a serving bowl, top with cheese and cilantro, and serve with warm tortillas and lime wedges.
