Ingredients

  • 2 tablespoons vegetable oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cans (15 oz each) pinto beans, undrained
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup chicken or vegetable broth
  • 1/2 cup shredded cheddar cheese
  • 8 flour or corn tortillas
  • 2 tablespoons fresh cilantro, chopped
  • for serving lime wedges

Directions

  1. 1Heat oil in a large skillet over medium heat. Add diced onion and cook for 3-4 minutes until softened.
  2. 2Stir in minced garlic and cook for 1 minute until fragrant.
  3. 3Add pinto beans with their liquid, cumin, salt, and pepper to the skillet.
  4. 4Mash beans with a potato masher or fork until desired consistency is reached, leaving some texture.
  5. 5Stir in broth and simmer for 5-7 minutes, stirring occasionally, until creamy.
  6. 6Warm tortillas in a dry skillet or directly over a gas flame for 30 seconds per side.
  7. 7Transfer beans to a serving bowl, top with cheese and cilantro, and serve with warm tortillas and lime wedges.
