Elegant French choux pastry puffs stacked with creamy pastry cream and topped with glossy chocolate ganache.

Ingredients

  • 1 cup water
  • 1/2 cup butter
  • 1 cup all-purpose flour
  • 4 eggs
  • 2 cups whole milk
  • 5 egg yolks
  • 1/4 cup sugar
  • 3 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 6 ounces dark chocolate
  • 1/2 cup heavy cream

Directions

  1. 1Preheat oven to 400°F. Bring water and butter to boil, remove from heat, stir in flour until combined, then beat in eggs one at a time. Pipe small and medium choux balls onto baking sheets and bake 25-30 minutes until golden and crisp.
  2. 2Heat milk until steaming. Whisk egg yolks with sugar until pale, then whisk in cornstarch. Slowly add hot milk to egg mixture while whisking, return to pan, and cook over medium heat stirring constantly until thick (2-3 minutes). Stir in vanilla and cool completely.
  3. 3Fill large and small choux puffs with pastry cream using a piping bag fitted with a small tip.
  4. 4Chop chocolate and heat cream until steaming, pour over chocolate and let sit 1 minute, then stir until smooth ganache forms.
  5. 5Dip tops of filled puffs in warm ganache and let set on parchment paper.
  6. 6Stack each small puff on top of a large puff to create the characteristic nun-like shape and refrigerate until serving.
