Ingredients

  • 2 large russet potatoes, cut into matchsticks
  • 6 oz cooked ham, cut into thin strips
  • 6 eggs
  • 1/2 cup frozen peas
  • 1/2 medium yellow onion, thinly sliced
  • 1/3 cup vegetable oil
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp fresh parsley, chopped

Directions

  1. 1Rinse the potato matchsticks, dry them thoroughly, and season lightly with salt.
  2. 2Fry the potatoes in vegetable oil until crisp and golden, then drain them on paper towel.
  3. 3Cook onion in 1 tablespoon of the frying oil until soft, then add ham and peas.
  4. 4Beat the eggs with black pepper and pour them into the skillet.
  5. 5Fold the eggs gently until barely set, then add the crisp potatoes and toss once.
  6. 6Finish with parsley and serve immediately so the potatoes keep some crunch.

💡 Add the fried potatoes only after the eggs are nearly set; cooking them in the scramble makes the signature crisp texture disappear.
