Revuelto Gramajo (Argentine Potato, Ham and Egg Scramble)
Argentine scramble of crisp matchstick potatoes, ham, eggs, and peas, tossed together just long enough for the eggs to stay soft.

Ingredients
- •2 large russet potatoes, cut into matchsticks
- •6 oz cooked ham, cut into thin strips
- •6 eggs
- •1/2 cup frozen peas
- •1/2 medium yellow onion, thinly sliced
- •1/3 cup vegetable oil
- •3/4 tsp salt
- •1/2 tsp black pepper
- •2 tbsp fresh parsley, chopped
Directions
- 1Rinse the potato matchsticks, dry them thoroughly, and season lightly with salt.
- 2Fry the potatoes in vegetable oil until crisp and golden, then drain them on paper towel.
- 3Cook onion in 1 tablespoon of the frying oil until soft, then add ham and peas.
- 4Beat the eggs with black pepper and pour them into the skillet.
- 5Fold the eggs gently until barely set, then add the crisp potatoes and toss once.
- 6Finish with parsley and serve immediately so the potatoes keep some crunch.
💡 Add the fried potatoes only after the eggs are nearly set; cooking them in the scramble makes the signature crisp texture disappear.
