Ricotta Crepes

Delicate, tender crepes filled with sweet ricotta cream and topped with fresh berries and honey.

Ingredients

  • 1 cup all-purpose flour
  • 2 eggs
  • 1/2 cup milk
  • 1/2 cup water
  • 1/4 teaspoon salt
  • 2 tablespoons butter, melted
  • 15 ounces ricotta cheese
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh berries
  • 2 tablespoons honey

Directions

  1. 1Combine flour, eggs, milk, water, salt, and melted butter in a blender; blend until smooth. Let batter rest for 30 minutes.
  2. 2Heat a non-stick skillet or crepe pan over medium-high heat and lightly butter it.
  3. 3Pour 1/4 cup batter into the center and tilt the pan to spread evenly. Cook for about 1-2 minutes until the bottom is light golden, then flip and cook the other side for 30 seconds. Transfer to a plate and repeat with remaining batter.
  4. 4In a bowl, mix ricotta cheese, powdered sugar, and vanilla extract until well combined.
  5. 5Spread 2-3 tablespoons of ricotta mixture onto each crepe, add a few berries, then fold or roll the crepe.
  6. 6Arrange crepes on serving plates, top with fresh berries, and drizzle with honey before serving.
