Ricotta Crepes
Delicate, tender crepes filled with sweet ricotta cream and topped with fresh berries and honey.

Ingredients
- •1 cup all-purpose flour
- •2 eggs
- •1/2 cup milk
- •1/2 cup water
- •1/4 teaspoon salt
- •2 tablespoons butter, melted
- •15 ounces ricotta cheese
- •2 tablespoons powdered sugar
- •1 teaspoon vanilla extract
- •1 cup fresh berries
- •2 tablespoons honey
Directions
- 1Combine flour, eggs, milk, water, salt, and melted butter in a blender; blend until smooth. Let batter rest for 30 minutes.
- 2Heat a non-stick skillet or crepe pan over medium-high heat and lightly butter it.
- 3Pour 1/4 cup batter into the center and tilt the pan to spread evenly. Cook for about 1-2 minutes until the bottom is light golden, then flip and cook the other side for 30 seconds. Transfer to a plate and repeat with remaining batter.
- 4In a bowl, mix ricotta cheese, powdered sugar, and vanilla extract until well combined.
- 5Spread 2-3 tablespoons of ricotta mixture onto each crepe, add a few berries, then fold or roll the crepe.
- 6Arrange crepes on serving plates, top with fresh berries, and drizzle with honey before serving.
