Rigatoni alla Vodka

Ingredients
- •1 pound rigatoni pasta
- •3 tablespoons butter
- •4 cloves garlic, minced
- •1/2 cup vodka
- •1 can (28 oz) crushed tomatoes
- •1 cup heavy cream
- •1/2 teaspoon red pepper flakes
- •1 teaspoon salt
- •1/2 teaspoon black pepper
- •1/4 cup fresh basil, chopped
- •1/2 cup Parmesan cheese, grated
Directions
- 1Bring a large pot of salted water to boil and cook rigatoni according to package directions until al dente; drain and set aside.
- 2In a large skillet, melt butter over medium heat and sauté minced garlic until fragrant, about 1 minute.
- 3Add vodka to the skillet and let it simmer for 2 minutes to reduce slightly.
- 4Stir in crushed tomatoes, red pepper flakes, salt, and black pepper, and simmer for 5 minutes.
- 5Reduce heat to low and stir in heavy cream, mixing until the sauce is smooth and well combined.
- 6Add the cooked rigatoni to the sauce and toss gently to coat all pasta evenly.
- 7Remove from heat, stir in fresh basil, and serve topped with grated Parmesan cheese.
