Rigatoni alla Vodka

Ingredients

  • 1 pound rigatoni pasta
  • 3 tablespoons butter
  • 4 cloves garlic, minced
  • 1/2 cup vodka
  • 1 can (28 oz) crushed tomatoes
  • 1 cup heavy cream
  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh basil, chopped
  • 1/2 cup Parmesan cheese, grated

Directions

  1. 1Bring a large pot of salted water to boil and cook rigatoni according to package directions until al dente; drain and set aside.
  2. 2In a large skillet, melt butter over medium heat and sauté minced garlic until fragrant, about 1 minute.
  3. 3Add vodka to the skillet and let it simmer for 2 minutes to reduce slightly.
  4. 4Stir in crushed tomatoes, red pepper flakes, salt, and black pepper, and simmer for 5 minutes.
  5. 5Reduce heat to low and stir in heavy cream, mixing until the sauce is smooth and well combined.
  6. 6Add the cooked rigatoni to the sauce and toss gently to coat all pasta evenly.
  7. 7Remove from heat, stir in fresh basil, and serve topped with grated Parmesan cheese.
