Ingredients

  • 2 cups whole milk
  • 4 tbsp unsalted butter
  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1 lb raw shrimp, peeled and chopped
  • 1/2 medium yellow onion, finely diced
  • 2 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh lemon juice
  • 2 eggs, beaten
  • 2 cups breadcrumbs
  • 5 cups vegetable oil for frying

Directions

  1. 1Bring 1 cup milk, 2 tablespoons butter, and half the salt to a simmer.
  2. 2Stir in flour and cook until a smooth dough pulls away from the pan.
  3. 3Cook onion and garlic in remaining butter, add shrimp, parsley, lemon, and remaining milk, and simmer until creamy.
  4. 4Cool dough and filling, then roll dough thin and cut circles.
  5. 5Fill and fold the circles, then coat each with beaten egg and breadcrumbs.
  6. 6Fry at 350°F (175°C) for 3 minutes until golden and crisp.
