Rissóis de Camarão (Portuguese Shrimp Turnovers)

Ingredients
- •2 cups whole milk
- •4 tbsp unsalted butter
- •2 cups all-purpose flour
- •1 tsp salt
- •1 lb raw shrimp, peeled and chopped
- •1/2 medium yellow onion, finely diced
- •2 cloves garlic, minced
- •2 tbsp fresh parsley, chopped
- •1 tbsp fresh lemon juice
- •2 eggs, beaten
- •2 cups breadcrumbs
- •5 cups vegetable oil for frying
Directions
- 1Bring 1 cup milk, 2 tablespoons butter, and half the salt to a simmer.
- 2Stir in flour and cook until a smooth dough pulls away from the pan.
- 3Cook onion and garlic in remaining butter, add shrimp, parsley, lemon, and remaining milk, and simmer until creamy.
- 4Cool dough and filling, then roll dough thin and cut circles.
- 5Fill and fold the circles, then coat each with beaten egg and breadcrumbs.
- 6Fry at 350°F (175°C) for 3 minutes until golden and crisp.
