Roast Beef and Cheddar Sandwich

A classic hot sandwich layered with sliced roast beef, melted sharp cheddar, and caramelized onions on toasted bread.

Ingredients

  • 2 tablespoons butter
  • 1 medium onion, sliced
  • 1/2 pound deli roast beef, thinly sliced
  • 4 slices sharp cheddar cheese
  • 4 slices bread, preferably rye or sourdough
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • to taste salt and pepper

Directions

  1. 1Melt 1 tablespoon butter in a skillet over medium heat and cook sliced onions for 8-10 minutes until golden and caramelized, then set aside.
  2. 2Toast the bread slices until golden brown.
  3. 3Spread mayonnaise on one slice of toast and mustard on the other.
  4. 4Layer roast beef on one slice, top with caramelized onions, then place cheddar cheese on top.
  5. 5Place the sandwich open-faced under the broiler for 2-3 minutes until cheese is melted and bubbly.
  6. 6Close the sandwich with the second slice of toast, cut diagonally, and serve warm.
