Roast Beef and Cheddar Sandwich
A classic hot sandwich layered with sliced roast beef, melted sharp cheddar, and caramelized onions on toasted bread.

Ingredients
- •2 tablespoons butter
- •1 medium onion, sliced
- •1/2 pound deli roast beef, thinly sliced
- •4 slices sharp cheddar cheese
- •4 slices bread, preferably rye or sourdough
- •2 tablespoons mayonnaise
- •1 teaspoon Dijon mustard
- •to taste salt and pepper
Directions
- 1Melt 1 tablespoon butter in a skillet over medium heat and cook sliced onions for 8-10 minutes until golden and caramelized, then set aside.
- 2Toast the bread slices until golden brown.
- 3Spread mayonnaise on one slice of toast and mustard on the other.
- 4Layer roast beef on one slice, top with caramelized onions, then place cheddar cheese on top.
- 5Place the sandwich open-faced under the broiler for 2-3 minutes until cheese is melted and bubbly.
- 6Close the sandwich with the second slice of toast, cut diagonally, and serve warm.
