Ingredients

  • •1 whole chicken (about 4 pounds), cut into pieces
  • •3 tablespoons sumac
  • •4 cloves garlic, minced
  • •1/4 cup olive oil
  • •2 tablespoons lemon juice
  • •1 teaspoon ground cumin
  • •1 teaspoon paprika
  • •1/2 teaspoon black pepper
  • •1 teaspoon salt
  • •1 large onion, sliced

Directions

  1. 1Preheat oven to 425°F (220°C).
  2. 2In a bowl, mix together sumac, garlic, olive oil, lemon juice, cumin, paprika, salt, and black pepper to form a paste.
  3. 3Arrange chicken pieces and sliced onion in a large roasting pan.
  4. 4Rub the sumac mixture generously over all chicken pieces, coating well.
  5. 5Roast uncovered for 35-40 minutes until chicken is golden brown and cooked through, basting halfway through cooking.
  6. 6Let rest for 5 minutes before serving with pan juices drizzled over top.

💡 Sumac tastes brightest when some is reserved for finishing. Long roasting softens its tart edge and can make the chicken seem less distinctive.
