Roti Prata with Curry (Singaporean Breakfast Flatbread)

Singaporean-style flaky griddled flatbread served with a simple aromatic potato curry for dipping.

Ingredients

  • 3 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp granulated sugar
  • 1 1/4 cups water
  • 1/3 cup vegetable oil
  • 1 lb potatoes, peeled and cubed
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 1/2 tbsp curry powder
  • 1 cup coconut milk
  • 1 cup water for curry

Directions

  1. 1Mix flour, salt, sugar, and water into a soft dough and knead for 8 minutes.
  2. 2Divide into eight balls, coat with oil, and rest covered for 30 minutes.
  3. 3Cook onion and garlic in 1 tablespoon oil, then add curry powder and potatoes.
  4. 4Add coconut milk and curry water and simmer for 20 minutes until the potatoes are tender.
  5. 5Stretch each dough ball very thin, fold into a layered parcel, and flatten.
  6. 6Griddle the prata for 3–4 minutes per side and serve with the potato curry.
