Roti Prata with Curry (Singaporean Breakfast Flatbread)
Singaporean-style flaky griddled flatbread served with a simple aromatic potato curry for dipping.

Ingredients
- •3 cups all-purpose flour
- •1 tsp salt
- •1 tsp granulated sugar
- •1 1/4 cups water
- •1/3 cup vegetable oil
- •1 lb potatoes, peeled and cubed
- •1 medium yellow onion, diced
- •2 cloves garlic, minced
- •1 1/2 tbsp curry powder
- •1 cup coconut milk
- •1 cup water for curry
Directions
- 1Mix flour, salt, sugar, and water into a soft dough and knead for 8 minutes.
- 2Divide into eight balls, coat with oil, and rest covered for 30 minutes.
- 3Cook onion and garlic in 1 tablespoon oil, then add curry powder and potatoes.
- 4Add coconut milk and curry water and simmer for 20 minutes until the potatoes are tender.
- 5Stretch each dough ball very thin, fold into a layered parcel, and flatten.
- 6Griddle the prata for 3–4 minutes per side and serve with the potato curry.
