Rou Jia Mo (Chinese Pork Flatbread Sandwich)

Ingredients
- •2 lb pork shoulder, cut into chunks
- •1/3 cup soy sauce
- •2 tbsp brown sugar
- •2 tbsp fresh ginger, sliced
- •4 cloves garlic, smashed
- •2 whole star anise
- •1 cinnamon stick
- •3 cups water
- •4 green onions
- •3 cups all-purpose flour
- •1 tsp instant yeast
- •1 1/4 cups warm water for dough
- •1 tsp salt
Directions
- 1Simmer pork, soy sauce, brown sugar, ginger, garlic, star anise, cinnamon, water, and green onions for 90 minutes.
- 2Meanwhile, mix flour, yeast, salt, and warm water into a smooth dough and rest for 45 minutes.
- 3Divide the dough into six rounds and roll each into a small flatbread.
- 4Cook the flatbreads in a dry skillet for 3–4 minutes per side until browned.
- 5Chop the tender pork finely and moisten it with a little reduced braising liquid.
- 6Split each flatbread and pack generously with the chopped pork.
💡 Reduce a little braising liquid before mixing it into the pork; watery filling soaks through the flatbread before the sandwich is eaten.
