Rum Cake
A rich, moist sponge cake infused with dark rum and topped with a glossy caramel glaze.

Ingredients
- •2 cups all-purpose flour
- •1 1/2 tsp baking powder
- •1/2 tsp salt
- •1/2 cup butter, softened
- •1 cup granulated sugar
- •3 large eggs
- •1/2 cup dark rum
- •1/2 cup whole milk
- •1 tsp vanilla extract
- •1/2 cup granulated sugar (for glaze)
- •1/4 cup butter (for glaze)
- •1/4 cup dark rum (for glaze)
Directions
- 1Preheat oven to 350°F and grease a bundt pan. Whisk together flour, baking powder, and salt in a bowl.
- 2Cream butter and sugar until light and fluffy, then beat in eggs one at a time. Alternately add flour mixture and combined rum, milk, and vanilla, beginning and ending with flour.
- 3Pour batter into prepared pan and bake for 45-50 minutes until a toothpick inserted comes out clean.
- 4Cool cake in pan for 15 minutes, then turn out onto a wire rack.
- 5For glaze, combine sugar and butter in a saucepan over medium heat, stirring until sugar dissolves and mixture turns golden, about 3-4 minutes.
- 6Remove from heat and carefully stir in rum, then brush the warm glaze over the cooled cake.
