Russian Tea Cakes

Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 cup finely chopped pecans or walnuts
  • 1/4 teaspoon salt
  • 2 cups powdered sugar for rolling

Directions

  1. 1Preheat oven to 350°F (175°C).
  2. 2Cream together softened butter and granulated sugar until light and fluffy, then beat in vanilla extract.
  3. 3In a separate bowl, whisk together flour, chopped nuts, and salt.
  4. 4Fold the dry ingredients into the butter mixture until just combined.
  5. 5Roll dough into 1-inch balls and place on ungreased baking sheets, spacing them about 1 inch apart.
  6. 6Bake for 12-15 minutes until golden brown at the edges but still pale on top.
  7. 7While still warm, roll each cookie in powdered sugar to coat generously, then cool on a wire rack.
  8. 8Roll cooled cookies in powdered sugar once more for a thick coating before serving.
