Russian Tea Cakes

Ingredients
- •1 cup unsalted butter, softened
- •1/2 cup granulated sugar
- •1 teaspoon vanilla extract
- •2 cups all-purpose flour
- •1 cup finely chopped pecans or walnuts
- •1/4 teaspoon salt
- •2 cups powdered sugar for rolling
Directions
- 1Preheat oven to 350°F (175°C).
- 2Cream together softened butter and granulated sugar until light and fluffy, then beat in vanilla extract.
- 3In a separate bowl, whisk together flour, chopped nuts, and salt.
- 4Fold the dry ingredients into the butter mixture until just combined.
- 5Roll dough into 1-inch balls and place on ungreased baking sheets, spacing them about 1 inch apart.
- 6Bake for 12-15 minutes until golden brown at the edges but still pale on top.
- 7While still warm, roll each cookie in powdered sugar to coat generously, then cool on a wire rack.
- 8Roll cooled cookies in powdered sugar once more for a thick coating before serving.
