Saag Lamb

Tender lamb pieces cooked in a creamy, aromatic spinach sauce infused with warming spices.

Ingredients

  • 1 lb lamb, cut into 1-inch cubes
  • 1 lb fresh spinach, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons ghee or oil
  • 1 cup plain yogurt
  • 1 teaspoon cumin seeds
  • 1 teaspoon garam masala
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon red chili powder
  • to taste Salt and pepper

Directions

  1. 1Heat ghee in a large pot over medium-high heat. Add cumin seeds and let them crackle for 30 seconds.
  2. 2Add diced onion and cook until golden, about 5 minutes. Stir in garlic and ginger, cook for 1 minute.
  3. 3Add lamb pieces and cook until browned on all sides, about 8-10 minutes.
  4. 4Stir in turmeric, garam masala, and chili powder. Cook for 1 minute until fragrant.
  5. 5Add yogurt and stir well to coat the lamb. Simmer for 10-15 minutes until lamb is tender.
  6. 6Add chopped spinach and cook until wilted, about 5 minutes. Stir occasionally.
  7. 7Season with salt and pepper to taste. Simmer for another 5 minutes and serve hot with rice or naan.
