Saag Lamb
Tender lamb pieces cooked in a creamy, aromatic spinach sauce infused with warming spices.

Ingredients
- •1 lb lamb, cut into 1-inch cubes
- •1 lb fresh spinach, chopped
- •1 medium onion, diced
- •3 cloves garlic, minced
- •1 tablespoon ginger, minced
- •2 tablespoons ghee or oil
- •1 cup plain yogurt
- •1 teaspoon cumin seeds
- •1 teaspoon garam masala
- •1/2 teaspoon turmeric
- •1/2 teaspoon red chili powder
- •to taste Salt and pepper
Directions
- 1Heat ghee in a large pot over medium-high heat. Add cumin seeds and let them crackle for 30 seconds.
- 2Add diced onion and cook until golden, about 5 minutes. Stir in garlic and ginger, cook for 1 minute.
- 3Add lamb pieces and cook until browned on all sides, about 8-10 minutes.
- 4Stir in turmeric, garam masala, and chili powder. Cook for 1 minute until fragrant.
- 5Add yogurt and stir well to coat the lamb. Simmer for 10-15 minutes until lamb is tender.
- 6Add chopped spinach and cook until wilted, about 5 minutes. Stir occasionally.
- 7Season with salt and pepper to taste. Simmer for another 5 minutes and serve hot with rice or naan.
