Saag Paneer

Indian paneer folded into a deeply seasoned spinach sauce with ginger, garlic, tomato, and warm spices.

Ingredients

  • 16 oz paneer, cut into cubes
  • 2 lb fresh spinach
  • 3 tbsp vegetable oil
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 large tomato, diced
  • 1 tsp ground cumin
  • 1 tsp garam masala
  • 1/2 tsp ground turmeric
  • 1/3 cup heavy cream
  • 1 tsp salt

Directions

  1. 1Blanch the spinach for 1 minute, chill, squeeze dry, and blend until mostly smooth.
  2. 2Brown paneer in 1 tablespoon vegetable oil and transfer to a plate.
  3. 3Cook onion in remaining oil for 5 minutes, then add garlic and ginger.
  4. 4Add tomato, cumin, garam masala, turmeric, and salt and cook for 5 minutes.
  5. 5Stir in the spinach and simmer for 8 minutes.
  6. 6Add paneer and cream and simmer gently for 5 minutes.
  7. 7Serve hot.

💡 Squeeze the blanched spinach dry before blending so the finished sauce stays rich rather than watery.
