Saag Paneer
Indian paneer folded into a deeply seasoned spinach sauce with ginger, garlic, tomato, and warm spices.

Ingredients
- •16 oz paneer, cut into cubes
- •2 lb fresh spinach
- •3 tbsp vegetable oil
- •1 medium yellow onion, diced
- •4 cloves garlic, minced
- •1 tbsp fresh ginger, grated
- •1 large tomato, diced
- •1 tsp ground cumin
- •1 tsp garam masala
- •1/2 tsp ground turmeric
- •1/3 cup heavy cream
- •1 tsp salt
Directions
- 1Blanch the spinach for 1 minute, chill, squeeze dry, and blend until mostly smooth.
- 2Brown paneer in 1 tablespoon vegetable oil and transfer to a plate.
- 3Cook onion in remaining oil for 5 minutes, then add garlic and ginger.
- 4Add tomato, cumin, garam masala, turmeric, and salt and cook for 5 minutes.
- 5Stir in the spinach and simmer for 8 minutes.
- 6Add paneer and cream and simmer gently for 5 minutes.
- 7Serve hot.
