Ingredients

  • •5 egg yolks
  • •1/4 cup sugar
  • •1/2 cup dry white wine or dessert wine
  • •1 tablespoon fresh lemon juice
  • •1 pinch salt

Directions

  1. 1Combine egg yolks and sugar in a heatproof bowl.
  2. 2Add white wine and lemon juice to the mixture.
  3. 3Place the bowl over a pot of simmering water (double boiler), ensuring the bottom doesn't touch the water.
  4. 4Whisk constantly for 8-10 minutes until the mixture becomes pale, fluffy, and reaches 160°F (71°C) for food safety.
  5. 5Remove from heat and continue whisking for 1 minute.
  6. 6Serve immediately while warm as a sauce over fresh fruit or desserts.

💡 Sabayon needs continuous whisking over gentle heat. If the bowl gets too hot, yolks scramble before the wine foam becomes thick and glossy.
