Sabich (Eggplant and Egg Pita)
Israeli pita stuffed with fried eggplant, hard-boiled egg, chopped salad, tahini, and amba for a rich portable vegetarian lunch.

Ingredients
- •4 rounds pita bread
- •1 large eggplant, sliced into rounds
- •4 eggs
- •2 tomatoes, diced
- •1 cucumber, diced
- •1/4 cup fresh parsley, chopped
- •1/2 cup tahini
- •2 tbsp fresh lemon juice
- •1/3 cup amba
- •1/3 cup vegetable oil
- •1 tsp salt
Directions
- 1Boil the eggs for 9 minutes, cool, peel, and slice them.
- 2Salt the eggplant lightly and fry the slices in vegetable oil for 3–4 minutes per side.
- 3Toss tomato, cucumber, parsley, lemon juice, and a pinch of salt into a quick salad.
- 4Stir tahini with enough water to make a spoonable sauce.
- 5Warm the pita and fill each with fried eggplant, sliced egg, and chopped salad.
- 6Finish with tahini and amba and serve immediately or at room temperature.
💡 Drain the fried eggplant briefly before filling the pita; excess oil makes the bread collapse before the sandwich is eaten.
