Sabich (Eggplant and Egg Pita)

Israeli pita stuffed with fried eggplant, hard-boiled egg, chopped salad, tahini, and amba for a rich portable vegetarian lunch.

Ingredients

  • 4 rounds pita bread
  • 1 large eggplant, sliced into rounds
  • 4 eggs
  • 2 tomatoes, diced
  • 1 cucumber, diced
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup tahini
  • 2 tbsp fresh lemon juice
  • 1/3 cup amba
  • 1/3 cup vegetable oil
  • 1 tsp salt

Directions

  1. 1Boil the eggs for 9 minutes, cool, peel, and slice them.
  2. 2Salt the eggplant lightly and fry the slices in vegetable oil for 3–4 minutes per side.
  3. 3Toss tomato, cucumber, parsley, lemon juice, and a pinch of salt into a quick salad.
  4. 4Stir tahini with enough water to make a spoonable sauce.
  5. 5Warm the pita and fill each with fried eggplant, sliced egg, and chopped salad.
  6. 6Finish with tahini and amba and serve immediately or at room temperature.

💡 Drain the fried eggplant briefly before filling the pita; excess oil makes the bread collapse before the sandwich is eaten.
