Saganaki
A crispy golden-fried cheese appetizer with a warm melting center, traditionally flambéed tableside and served with lemon.

Ingredients
- •8 oz Saganaki or Halloumi cheese, cut into ½-inch thick slices
- •½ cup all-purpose flour
- •1 egg, beaten
- •¼ cup breadcrumbs
- •2 cups vegetable oil for frying
- •1 lemon, cut into wedges
- •2 tablespoons brandy or ouzo (optional, for flambéing)
- •to taste salt and pepper
Directions
- 1Pat cheese slices dry with paper towels and season lightly with salt and pepper.
- 2Set up a breading station with flour in one shallow bowl, beaten egg in another, and breadcrumbs mixed with salt in a third.
- 3Coat each cheese slice in flour, shaking off excess, then dip in egg, and coat thoroughly with breadcrumbs.
- 4Heat oil in a deep skillet to 350°F (175°C). Fry cheese slices 1-2 minutes per side until golden brown and crispy.
- 5Transfer fried cheese to a plate lined with paper towels to drain briefly.
- 6Serve immediately on a warm plate, squeezing fresh lemon juice over the top, and optionally flambé with a splash of brandy if desired.
