Sai Oua
A fragrant Northern Thai grilled sausage with herbs and spices, bursting with pork flavor and served with sticky rice.

Ingredients
- •500g ground pork
- •2 tablespoons fish sauce
- •1 tablespoon red curry paste
- •3 cloves garlic, minced
- •2 tablespoons fresh cilantro, chopped
- •1 tablespoon fresh lemongrass, finely minced
- •1 teaspoon ground coriander
- •½ teaspoon black pepper
- •1 tablespoon soy sauce
- •pork casings or bamboo skewers for shaping
Directions
- 1Mix ground pork with fish sauce, red curry paste, minced garlic, cilantro, lemongrass, coriander, black pepper, and soy sauce in a bowl.
- 2Divide the mixture into 8 equal portions and shape each into a sausage link using pork casings, or form around soaked bamboo skewers.
- 3Let the sausages rest in the refrigerator for at least 20 minutes to help them hold their shape.
- 4Heat a grill or grill pan over medium-high heat and lightly oil the surface.
- 5Grill the sausages for 8-10 minutes, turning occasionally, until cooked through and lightly charred on the outside.
- 6Serve hot with sticky rice and fresh vegetables like cucumber, tomato, and cabbage on the side.
