Sai Oua (Isaan Sausage)
Aromatic northern Thai sausage with herbs and spices, grilled to perfection and served with sticky rice and fresh vegetables.

Ingredients
- •500g ground pork
- •2 tablespoons fish sauce
- •3 stalks lemongrass, finely chopped
- •4 cloves garlic, minced
- •2 tablespoons fresh cilantro, chopped
- •1 tablespoon fresh ginger, grated
- •2 teaspoons red curry paste
- •1 teaspoon black pepper
- •1 teaspoon salt
- •1 tablespoon rice flour
Directions
- 1Mix ground pork with fish sauce, lemongrass, garlic, cilantro, ginger, curry paste, black pepper, and salt in a bowl.
- 2Add rice flour and mix thoroughly until the mixture is well combined and slightly sticky.
- 3Divide the mixture into 8 equal portions and shape each into a long patty or sausage link.
- 4Heat a grill pan or barbecue to medium-high heat and lightly oil the surface.
- 5Grill the sausages for 6-8 minutes per side until golden brown and cooked through.
- 6Transfer to a serving plate and let rest for 2 minutes.
- 7Serve hot with sticky rice, fresh vegetables (cucumber, tomato, cabbage), and dipping sauce made from lime juice, fish sauce, and chili.
