Salsa Criolla

Peruvian red-onion relish with lime, ají amarillo, cilantro, and salt, served fresh as a sharp counterpoint to rich foods.

Ingredients

  • 1 large red onion, sliced into very thin half-moons
  • 2 cups ice water
  • 3 tbsp fresh lime juice
  • 1 tbsp ají amarillo, seeded and finely sliced
  • 2 tbsp fresh cilantro, roughly chopped
  • 1/2 tsp kosher salt

Directions

  1. 1Soak the sliced red onion in ice water for 10 minutes to crisp the slices and soften their harshness.
  2. 2Drain the onion thoroughly and spin or blot it dry so water does not dilute the lime juice.
  3. 3Toss the onion with lime juice, ají amarillo, cilantro, and salt until evenly seasoned.
  4. 4Rest the salsa criolla 5 minutes and serve immediately while the onion remains crisp.

💡 This relish is best the day it is made; overnight storage softens the onion and dulls the fresh lime-and-ají character.
