Salsa Criolla
Peruvian red-onion relish with lime, ají amarillo, cilantro, and salt, served fresh as a sharp counterpoint to rich foods.

Ingredients
- •1 large red onion, sliced into very thin half-moons
- •2 cups ice water
- •3 tbsp fresh lime juice
- •1 tbsp ají amarillo, seeded and finely sliced
- •2 tbsp fresh cilantro, roughly chopped
- •1/2 tsp kosher salt
Directions
- 1Soak the sliced red onion in ice water for 10 minutes to crisp the slices and soften their harshness.
- 2Drain the onion thoroughly and spin or blot it dry so water does not dilute the lime juice.
- 3Toss the onion with lime juice, ají amarillo, cilantro, and salt until evenly seasoned.
- 4Rest the salsa criolla 5 minutes and serve immediately while the onion remains crisp.
💡 This relish is best the day it is made; overnight storage softens the onion and dulls the fresh lime-and-ají character.
