Salt and Pepper Shrimp
Crispy golden shrimp tossed with aromatic garlic, chilies, and scallions in a savory salt and pepper coating.

Ingredients
- •1 lb large shrimp, peeled and deveined
- •1/2 cup cornstarch
- •1 tablespoon salt
- •1 teaspoon white pepper
- •3 cloves garlic, minced
- •2 Thai chilies or jalapeños, sliced
- •3 scallions, cut into 1-inch pieces
- •1 tablespoon ginger, minced
- •2 cups vegetable oil for frying
- •1 teaspoon sesame oil
Directions
- 1Pat shrimp dry with paper towels. Mix cornstarch, salt, and white pepper in a bowl, then coat shrimp evenly.
- 2Heat vegetable oil in a wok or large skillet over medium-high heat until shimmering.
- 3Working in batches, fry shrimp for 2-3 minutes until golden and crispy, then transfer to a paper towel-lined plate.
- 4Pour off all but 2 tablespoons of oil from the wok. Add garlic, ginger, and chilies, stir-frying for 30 seconds until fragrant.
- 5Return shrimp to the wok and toss with the aromatics for 1 minute to combine.
- 6Add scallions and sesame oil, toss everything together for another 30 seconds.
- 7Transfer to a serving plate and serve immediately while hot.
