Salt and Pepper Shrimp

Crispy golden shrimp tossed with aromatic garlic, chilies, and scallions in a savory salt and pepper coating.

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1/2 cup cornstarch
  • 1 tablespoon salt
  • 1 teaspoon white pepper
  • 3 cloves garlic, minced
  • 2 Thai chilies or jalapeños, sliced
  • 3 scallions, cut into 1-inch pieces
  • 1 tablespoon ginger, minced
  • 2 cups vegetable oil for frying
  • 1 teaspoon sesame oil

Directions

  1. 1Pat shrimp dry with paper towels. Mix cornstarch, salt, and white pepper in a bowl, then coat shrimp evenly.
  2. 2Heat vegetable oil in a wok or large skillet over medium-high heat until shimmering.
  3. 3Working in batches, fry shrimp for 2-3 minutes until golden and crispy, then transfer to a paper towel-lined plate.
  4. 4Pour off all but 2 tablespoons of oil from the wok. Add garlic, ginger, and chilies, stir-frying for 30 seconds until fragrant.
  5. 5Return shrimp to the wok and toss with the aromatics for 1 minute to combine.
  6. 6Add scallions and sesame oil, toss everything together for another 30 seconds.
  7. 7Transfer to a serving plate and serve immediately while hot.
