Salt-Baked Chicken

Ingredients

  • 1 whole chicken (3-4 lbs)
  • 6 cups kosher salt
  • 3 egg whites
  • 2 tablespoons water
  • 4 slices ginger, smashed
  • 4 stalks scallions
  • 1 tablespoon Shaoxing wine
  • 1 teaspoon white pepper powder
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil

Directions

  1. 1Pat the chicken dry and season the cavity with ginger, scallions, Shaoxing wine, and white pepper.
  2. 2Mix kosher salt with egg whites and water until it reaches a wet sand consistency.
  3. 3Spread half the salt mixture on the bottom of a baking dish, then place the chicken on top.
  4. 4Cover the chicken completely with the remaining salt mixture, packing it firmly.
  5. 5Bake at 425°F for 50-60 minutes until the salt crust is golden and a meat thermometer reads 165°F at the thickest part.
  6. 6Let rest for 10 minutes, then crack open the salt crust with a hammer or mallet.
  7. 7Carefully remove the chicken and brush away excess salt, then cut into pieces.
  8. 8Serve with a dipping sauce made from soy sauce and sesame oil mixed together.
