Salt-Baked Chicken

Ingredients
- •1 whole chicken (3-4 lbs)
- •6 cups kosher salt
- •3 egg whites
- •2 tablespoons water
- •4 slices ginger, smashed
- •4 stalks scallions
- •1 tablespoon Shaoxing wine
- •1 teaspoon white pepper powder
- •2 tablespoons soy sauce
- •1 tablespoon sesame oil
Directions
- 1Pat the chicken dry and season the cavity with ginger, scallions, Shaoxing wine, and white pepper.
- 2Mix kosher salt with egg whites and water until it reaches a wet sand consistency.
- 3Spread half the salt mixture on the bottom of a baking dish, then place the chicken on top.
- 4Cover the chicken completely with the remaining salt mixture, packing it firmly.
- 5Bake at 425°F for 50-60 minutes until the salt crust is golden and a meat thermometer reads 165°F at the thickest part.
- 6Let rest for 10 minutes, then crack open the salt crust with a hammer or mallet.
- 7Carefully remove the chicken and brush away excess salt, then cut into pieces.
- 8Serve with a dipping sauce made from soy sauce and sesame oil mixed together.
