Salteñas (Bolivian Beef Pastries)

Ingredients

  • 4 cups all-purpose flour
  • 1/2 cup unsalted butter, melted
  • 1 cup warm water
  • 2 tbsp granulated sugar
  • 1 tsp salt
  • 1 lb ground beef
  • 1 medium yellow onion, diced
  • 1 large potato, peeled and diced small
  • 1 cup frozen peas
  • 1 cup beef broth
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 1 tbsp gelatin powder
  • 2 hard-boiled eggs, chopped
  • 1/2 cup green olives, sliced
  • 1 egg, beaten

Directions

  1. 1Cook beef, onion, potato, peas, broth, paprika, cumin, and salt for 15 minutes until the potato is tender.
  2. 2Stir gelatin into the hot filling, then chill it for 60 minutes until thick enough to spoon.
  3. 3Mix flour, sugar, salt, melted butter, and warm water into a smooth dough.
  4. 4Divide the dough into twelve rounds and fill each with beef mixture, egg, and olives.
  5. 5Seal the pastries tightly with the seam facing upward and brush with beaten egg.
  6. 6Bake at 400°F (200°C) for 18–20 minutes until deeply golden.

💡 Chill the filling until nearly gelled before shaping; a loose filling leaks through the seam before the salteña crust can set.
