Salteñas (Bolivian Beef Pastries)

Ingredients
- •4 cups all-purpose flour
- •1/2 cup unsalted butter, melted
- •1 cup warm water
- •2 tbsp granulated sugar
- •1 tsp salt
- •1 lb ground beef
- •1 medium yellow onion, diced
- •1 large potato, peeled and diced small
- •1 cup frozen peas
- •1 cup beef broth
- •1 tsp paprika
- •1 tsp ground cumin
- •1 tbsp gelatin powder
- •2 hard-boiled eggs, chopped
- •1/2 cup green olives, sliced
- •1 egg, beaten
Directions
- 1Cook beef, onion, potato, peas, broth, paprika, cumin, and salt for 15 minutes until the potato is tender.
- 2Stir gelatin into the hot filling, then chill it for 60 minutes until thick enough to spoon.
- 3Mix flour, sugar, salt, melted butter, and warm water into a smooth dough.
- 4Divide the dough into twelve rounds and fill each with beef mixture, egg, and olives.
- 5Seal the pastries tightly with the seam facing upward and brush with beaten egg.
- 6Bake at 400°F (200°C) for 18–20 minutes until deeply golden.
💡 Chill the filling until nearly gelled before shaping; a loose filling leaks through the seam before the salteña crust can set.
