Saltfish Buljol (Trinidadian Salt Cod Breakfast Salad)

Ingredients

  • 1 lb saltfish (salt cod)
  • 2 medium tomatoes, diced
  • 1 red bell pepper, thinly sliced
  • 1/2 medium red onion, thinly sliced
  • 3 green onions, sliced
  • 1/2 Scotch bonnet pepper, finely minced
  • 2 tbsp fresh lime juice
  • 2 tbsp olive oil
  • 1/4 cup fresh cilantro, chopped
  • 1/4 tsp black pepper

Directions

  1. 1Soak the saltfish in cold water for 12 hours, changing the water twice to remove excess salt.
  2. 2Drain the fish, cover it with fresh water, and simmer for 10 minutes.
  3. 3Drain again, cool briefly, then flake the salt cod and remove any skin or bones.
  4. 4Toss the warm fish with tomatoes, bell pepper, red onion, green onions, Scotch bonnet, and cilantro.
  5. 5Add lime juice, olive oil, and black pepper and toss gently.
  6. 6Let the buljol stand for 10 minutes, then serve warm or at room temperature.

💡 Taste the fish after simmering before adding any salt; properly soaked salt cod usually seasons the entire salad on its own.
