Saltfish Buljol (Trinidadian Salt Cod Breakfast Salad)
Trinidadian salt cod salad with tomato, sweet pepper, onion, scallion, chile, and lime, served warm or at room temperature for breakfast.

Ingredients
- •1 lb saltfish (salt cod)
- •2 medium tomatoes, diced
- •1 red bell pepper, thinly sliced
- •1/2 medium red onion, thinly sliced
- •3 green onions, sliced
- •1/2 Scotch bonnet pepper, finely minced
- •2 tbsp fresh lime juice
- •2 tbsp olive oil
- •1/4 cup fresh cilantro, chopped
- •1/4 tsp black pepper
Directions
- 1Soak the saltfish in cold water for 12 hours, changing the water twice to remove excess salt.
- 2Drain the fish, cover it with fresh water, and simmer for 10 minutes.
- 3Drain again, cool briefly, then flake the salt cod and remove any skin or bones.
- 4Toss the warm fish with tomatoes, bell pepper, red onion, green onions, Scotch bonnet, and cilantro.
- 5Add lime juice, olive oil, and black pepper and toss gently.
- 6Let the buljol stand for 10 minutes, then serve warm or at room temperature.
💡 Taste the fish after simmering before adding any salt; properly soaked salt cod usually seasons the entire salad on its own.
