Sambal Kacang Panjang (Malaysian Long Beans with Sambal)
Long beans blistered in a hot pan and coated in sambal, sweet and salty against the bean's grassiness.

Ingredients
- •500 g long beans, cut into 5 cm pieces
- •2 tbsp sambal oelek
- •2 shallots, sliced
- •1 tbsp neutral oil
- •1 tsp sugar
Directions
- 1Heat the oil in a wide pan until it is properly hot.
- 2Add the long beans in one layer and leave them undisturbed for two minutes so they blister.
- 3Toss and cook a further three minutes until they are bright and patched with brown.
- 4Push the beans aside, add the shallots, and fry two minutes until soft.
- 5Stir in the sambal oelek and sugar and toss everything together for two minutes.
- 6Season with salt and serve warm or at room temperature.
💡 Leaving the beans still at the start is what gives the blistering. Constant stirring steams them and they stay flat green.
