Ingredients

  • 500 g long beans, cut into 5 cm pieces
  • 2 tbsp sambal oelek
  • 2 shallots, sliced
  • 1 tbsp neutral oil
  • 1 tsp sugar

Directions

  1. 1Heat the oil in a wide pan until it is properly hot.
  2. 2Add the long beans in one layer and leave them undisturbed for two minutes so they blister.
  3. 3Toss and cook a further three minutes until they are bright and patched with brown.
  4. 4Push the beans aside, add the shallots, and fry two minutes until soft.
  5. 5Stir in the sambal oelek and sugar and toss everything together for two minutes.
  6. 6Season with salt and serve warm or at room temperature.

💡 Leaving the beans still at the start is what gives the blistering. Constant stirring steams them and they stay flat green.
