Sambar
A tangy and spiced lentil-based vegetable stew from South India that's bursting with aromatic flavors and perfect served with rice or dosa.

Ingredients
- •1 cup toor dal (split pigeon peas)
- •2 medium onions, chopped
- •3 medium tomatoes, chopped
- •2 cups mixed vegetables (carrots, beans, eggplant, potatoes)
- •2 tablespoons tamarind paste
- •1 tablespoon sambar powder
- •1 teaspoon mustard seeds
- •1 teaspoon cumin seeds
- •1 dried red chili
- •10-12 curry leaves
- •2 tablespoons vegetable oil
- •salt to taste salt
Directions
- 1Rinse the toor dal and cook in 3 cups of water with a pinch of salt until soft, about 20 minutes.
- 2Heat oil in a pot and add mustard seeds, cumin seeds, dried chili, and curry leaves until seeds splutter.
- 3Add chopped onions and sauté until golden, then add tomatoes and cook until soft.
- 4Add mixed vegetables and cook for 5-7 minutes until partially tender.
- 5Pour in the cooked dal, add tamarind paste, sambar powder, and salt, then simmer for 10 minutes.
- 6Stir well and adjust seasoning, then serve hot with steamed rice or dosa.
