Sambousek (Lebanese Fried Cheese Pastries)
Lebanese fried pastries made with a short, non-yeasted dough and filled with feta, mozzarella, parsley, and mint.

Ingredients
- •2 1/2 cups all-purpose flour
- •1/4 cup olive oil
- •3/4 cup warm water
- •3/4 tsp salt
- •1 cup feta cheese, crumbled
- •1 cup mozzarella cheese, shredded
- •1/4 cup fresh parsley, chopped
- •2 tbsp fresh mint, chopped
- •4 cups vegetable oil for frying
Directions
- 1Mix flour, salt, olive oil, and warm water into a smooth non-yeasted dough.
- 2Knead for 4 minutes, cover, and rest the dough for 20 minutes.
- 3Combine feta, mozzarella, parsley, and mint in a bowl.
- 4Roll the dough thin, cut circles, add cheese filling, and fold each into a half-moon.
- 5Crimp the edges firmly and fry at 350°F (175°C) for 2–3 minutes per side.
- 6Drain the sambousek on paper towel and serve warm.
💡 Keep the dough thin and the seam firmly crimped; thick dough overwhelms the cheese and loose seams open in the fryer.
