Sambousek (Lebanese Fried Cheese Pastries)

Lebanese fried pastries made with a short, non-yeasted dough and filled with feta, mozzarella, parsley, and mint.

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1/4 cup olive oil
  • 3/4 cup warm water
  • 3/4 tsp salt
  • 1 cup feta cheese, crumbled
  • 1 cup mozzarella cheese, shredded
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp fresh mint, chopped
  • 4 cups vegetable oil for frying

Directions

  1. 1Mix flour, salt, olive oil, and warm water into a smooth non-yeasted dough.
  2. 2Knead for 4 minutes, cover, and rest the dough for 20 minutes.
  3. 3Combine feta, mozzarella, parsley, and mint in a bowl.
  4. 4Roll the dough thin, cut circles, add cheese filling, and fold each into a half-moon.
  5. 5Crimp the edges firmly and fry at 350°F (175°C) for 2–3 minutes per side.
  6. 6Drain the sambousek on paper towel and serve warm.

💡 Keep the dough thin and the seam firmly crimped; thick dough overwhelms the cheese and loose seams open in the fryer.
