Crispy, golden-fried pastry triangles filled with spiced potatoes and peas that are irresistibly savory and satisfying.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup water
  • 3 tablespoons vegetable oil
  • 1/2 teaspoon salt
  • 3 medium potatoes, boiled and diced
  • 1 cup frozen peas
  • 2 teaspoons cumin seeds
  • 1 teaspoon garam masala
  • 1/2 teaspoon cayenne pepper
  • 2 tablespoons fresh cilantro, chopped
  • oil for frying vegetable oil

Directions

  1. 1Mix flour, salt, and 2 tablespoons oil; add water gradually to form a stiff dough. Rest for 15 minutes.
  2. 2Heat 1 tablespoon oil in a pan, toast cumin seeds, then add diced potatoes, peas, garam masala, cayenne, and cilantro. Cook for 3 minutes and let cool.
  3. 3Divide dough into 6 balls and roll each into a thin circle. Cut circles in half and roll each half into a cone shape.
  4. 4Fill each cone with a spoonful of potato mixture and seal the edges with water.
  5. 5Heat oil in a deep pan to 350°F and fry samosas in batches until golden brown, about 3-4 minutes per batch.
  6. 6Drain on paper towels and serve hot with tamarind chutney or mint yogurt sauce.
