Sausage and Pepper Foil Pack Bake

Ingredients

• •1 lb Italian sausage, sliced
• •3 medium potatoes, cubed
• •2 bell peppers, sliced
• •1 large yellow onion, sliced
• •2 tbsp olive oil
• •1 tsp Italian seasoning
• •1 cup baby spinach

Directions

1. 1Preheat oven to 400°F and tear four large sheets of foil.
2. 2Toss sausage, potatoes, peppers, and onion with olive oil and seasoning.
3. 3Divide mixture evenly among the four foil sheets.
4. 4Top each portion with a small handful of baby spinach.
5. 5Seal foil packs tightly and place on a baking sheet.
6. 6Bake 30 minutes until potatoes are fork-tender.
7. 7Carefully open packs and serve immediately.
