⏱ 20 minServes 2American
Ingredients
- •1 cup old-fashioned rolled oats
- •1¾ cups water
- •¼ cup low-sodium chicken or vegetable broth
- •¾ cup (about 75 g) sharp cheddar cheese, freshly shredded
- •1 tbsp unsalted butter
- •2 large eggs
- •3 green onions (scallions), thinly sliced
- •¼ tsp garlic powder
- •¼ tsp, plus more to taste salt
- •¼ tsp, plus more to taste black pepper, freshly cracked
- •1 tsp neutral oil (canola or vegetable)
- •to taste hot sauce (such as Frank's RedHot), for serving
Directions
- 1Combine the water and broth in a medium saucepan and bring to a boil over medium-high heat. Stir in the rolled oats, garlic powder, and ¼ tsp salt. Reduce heat to medium and cook, stirring occasionally, for 5 minutes until the oats have absorbed most of the liquid and are creamy.
- 2Remove the pot from heat. Add the shredded cheddar and butter, stirring vigorously until both are fully melted and incorporated. Taste and adjust salt and pepper. Cover the pot to keep warm.
- 3Heat the neutral oil in a non-stick skillet over medium heat. Once shimmering, crack both eggs into the pan, spacing them apart. Season each egg immediately with a small pinch of salt and pepper.
- 4Fry the eggs undisturbed for 2 to 3 minutes until the whites are fully set but the yolks are still runny, or cook to your preferred doneness. Remove from heat.
- 5Divide the savory oatmeal evenly between two bowls. Lay a fried egg on top of each portion.
- 6Scatter the sliced green onions generously over both bowls. Finish with a few extra cracks of black pepper and a dash of hot sauce if desired. Serve immediately.
💡 Freshly shredded cheddar melts far smoother than pre-shredded bags, which contain anti-caking starch — worth the extra 2 minutes. No broth on hand? Use all water and add an extra pinch of salt and a small pat of butter for richness. For a gluten-free version, swap in certified gluten-free rolled oats (widely available at Canadian chains like Loblaws or Sobeys). Quick oats work in a pinch but produce a softer, less textured result. Upgrade the toppings with a drizzle of chili crisp, a spoonful of everything bagel seasoning, or a few drops of sesame oil for an umami boost.
