- •3/4 cup milk
- •1/3 cup olive oil
- •1 1/2 cups cheddar cheese, shredded
- •3 green onions, thinly sliced
Directions
- 1Heat oven to 375°F (190°C) and line a 12-cup muffin tin.
- 2Squeeze the grated zucchini in a clean towel until only lightly damp.
- 3Whisk flour, baking powder, baking soda, salt, and black pepper in a large bowl.
- 4Whisk eggs, milk, and olive oil separately, then stir into the dry ingredients just until moistened.
- 5Fold in zucchini, cheddar, and green onions without overmixing.
- 6Divide batter among muffin cups and bake 18–20 minutes until the tops spring back.
