Seafood Gumbo

A rich and smoky Louisiana classic loaded with shrimp, crab, and okra in a deeply flavored roux-based broth.

Ingredients

  • 1/4 cup vegetable oil
  • 1/4 cup all-purpose flour
  • 1 medium onion, diced
  • 2 stalks celery, diced
  • 1 large bell pepper, diced
  • 6 cups chicken or seafood broth
  • 1 pound large shrimp, peeled and deveined
  • 1 pound lump crab meat
  • 2 cups fresh okra, sliced
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon hot sauce
  • 3 cups cooked rice

Directions

  1. 1Heat oil in a large pot over medium heat and whisk in flour to create a dark roux, stirring constantly for 8-10 minutes until chocolate brown.
  2. 2Add onion, celery, and bell pepper to the roux and sauté for 5 minutes until softened.
  3. 3Pour in broth slowly while stirring to avoid lumps, then add Cajun seasoning and hot sauce.
  4. 4Bring to a boil, then reduce heat and simmer for 20 minutes to develop flavors.
  5. 5Add okra and simmer for 10 minutes, then gently stir in shrimp and crab meat.
  6. 6Cook for 5-7 minutes until shrimp are pink and cooked through.
  7. 7Serve over rice in bowls and garnish as desired.
