Seafood Gumbo

Ingredients
- •1/4 cup vegetable oil
- •1/4 cup all-purpose flour
- •1 medium onion, diced
- •2 stalks celery, diced
- •1 large bell pepper, diced
- •6 cups chicken or seafood broth
- •1 pound large shrimp, peeled and deveined
- •1 pound lump crab meat
- •2 cups fresh okra, sliced
- •2 teaspoons Cajun seasoning
- •1 teaspoon hot sauce
- •3 cups cooked rice
Directions
- 1Heat oil in a large pot over medium heat and whisk in flour to create a dark roux, stirring constantly for 8-10 minutes until chocolate brown.
- 2Add onion, celery, and bell pepper to the roux and sauté for 5 minutes until softened.
- 3Pour in broth slowly while stirring to avoid lumps, then add Cajun seasoning and hot sauce.
- 4Bring to a boil, then reduce heat and simmer for 20 minutes to develop flavors.
- 5Add okra and simmer for 10 minutes, then gently stir in shrimp and crab meat.
- 6Cook for 5-7 minutes until shrimp are pink and cooked through.
- 7Serve over rice in bowls and garnish as desired.
