Serabi Solo (Indonesian Coconut Pancakes)

Rice flour and coconut milk cooked in a small pan until the edges go crisp and thin and the centre stays soft.

Ingredients

  • 180 g rice flour
  • 400 ml coconut milk
  • 50 g sugar
  • 1/2 tsp salt
  • 1 pandan leaf

Directions

  1. 1Warm the coconut milk with the pandan leaf and steep ten minutes, then lift the leaf out.
  2. 2Whisk the rice flour, sugar and salt into the warm coconut milk until completely smooth.
  3. 3Cover and rest the batter thirty minutes.
  4. 4Heat a small heavy pan over medium-low heat, ungreased.
  5. 5Pour in a ladle of batter and swirl once so the edge climbs the side of the pan.
  6. 6Cover and cook five minutes until the rim is lacy and crisp and the centre has just set.

💡 Medium-low and covered. Too hot and the crisp edge burns before the soft middle has any chance to cook.
