Ingredients
- •500g twaróg (Polish curd cheese) or ricotta
- •4 eggs, separated
- •100g sugar
- •2 tablespoons butter, melted
- •3 tablespoons all-purpose flour
- •1 teaspoon vanilla extract
- •zest of 1 lemon
- •pinch salt
Directions
- 1Preheat oven to 180°C (350°F). Grease a 9-inch round baking dish with butter.
- 2Beat egg whites with a pinch of salt until stiff peaks form, then set aside.
- 3Mix curd cheese, egg yolks, sugar, melted butter, flour, vanilla extract, and lemon zest until smooth.
- 4Gently fold the beaten egg whites into the cheese mixture in two batches.
- 5Pour into the prepared baking dish and smooth the surface.
- 6Bake for 40-45 minutes until golden brown and a toothpick inserted in the center comes out clean.
- 7Cool completely before serving, preferably chilled.
💡 Sernik filling should be smooth but not heavily aerated. Beating too much air into the curd mixture encourages dramatic rising and cracking as the cheesecake cools.
