Ingredients
- •8 cups dashi or chicken broth
- •1 lb thinly sliced beef ribeye or sirloin
- •8 oz firm tofu, cubed
- •4 cups napa cabbage, chopped
- •2 carrots, thinly sliced
- •8 oz shiitake mushrooms, sliced
- •1 bunch green onions, cut into 2-inch pieces
- •1/3 cup soy sauce
- •3 tablespoons sesame oil
- •2 tablespoons rice vinegar
- •2 cloves garlic, minced
- •1 tablespoon sesame seeds
Directions
- 1Pour dashi or chicken broth into a hot pot or large shallow pan and bring to a gentle simmer.
- 2Combine soy sauce, sesame oil, rice vinegar, minced garlic, and sesame seeds in a small bowl to make the dipping sauce.
- 3Arrange all sliced beef, tofu, vegetables, and mushrooms on a large platter, keeping each ingredient separate.
- 4Place the hot pot in the center of the table with the dipping sauce in small bowls for each diner.
- 5Each person uses chopsticks to pick up a piece of meat or vegetable, swish it in the simmering broth for 3-5 seconds until cooked, then dip in sauce.
- 6Continue cooking and eating in this interactive manner, starting with heartier vegetables, then tofu, and finally meat.
- 7After all ingredients are consumed, serve the remaining broth as a light soup to finish the meal.
