Shahi Paneer

Creamy, aromatic cottage cheese cubes in a rich tomato-based sauce flavored with cream, kasuri methi, and warm spices.

Ingredients

  • 400g paneer, cut into cubes
  • 2 tablespoons ghee or oil
  • 1 large onion, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 400g tomatoes, pureed
  • 1/2 cup heavy cream or yogurt
  • 1 teaspoon garam masala
  • 1/2 teaspoon kasuri methi (dried fenugreek leaves)
  • 1/2 teaspoon red chili powder
  • 1/4 teaspoon turmeric powder
  • to taste salt and black pepper
  • 2 tablespoons cashew paste

Directions

  1. 1Heat ghee in a pan and shallow fry paneer cubes until golden, then set aside.
  2. 2In the same pan, sauté chopped onions until translucent, then add ginger-garlic paste and cook for 1 minute.
  3. 3Add tomato puree, turmeric, red chili powder, and cook until the raw tomato smell disappears, about 5 minutes.
  4. 4Stir in cashew paste and garam masala, cooking for 2 minutes until well combined.
  5. 5Add cream or yogurt and mix well, simmering for 3-4 minutes on low heat.
  6. 6Gently add the fried paneer cubes, season with salt and black pepper, and simmer for 5 minutes.
  7. 7Sprinkle kasuri methi on top, stir gently, and cook for another minute before serving.
