Shahi Paneer

Ingredients
- •400g paneer, cut into cubes
- •2 tablespoons ghee or oil
- •1 large onion, finely chopped
- •1 tablespoon ginger-garlic paste
- •400g tomatoes, pureed
- •1/2 cup heavy cream or yogurt
- •1 teaspoon garam masala
- •1/2 teaspoon kasuri methi (dried fenugreek leaves)
- •1/2 teaspoon red chili powder
- •1/4 teaspoon turmeric powder
- •to taste salt and black pepper
- •2 tablespoons cashew paste
Directions
- 1Heat ghee in a pan and shallow fry paneer cubes until golden, then set aside.
- 2In the same pan, sauté chopped onions until translucent, then add ginger-garlic paste and cook for 1 minute.
- 3Add tomato puree, turmeric, red chili powder, and cook until the raw tomato smell disappears, about 5 minutes.
- 4Stir in cashew paste and garam masala, cooking for 2 minutes until well combined.
- 5Add cream or yogurt and mix well, simmering for 3-4 minutes on low heat.
- 6Gently add the fried paneer cubes, season with salt and black pepper, and simmer for 5 minutes.
- 7Sprinkle kasuri methi on top, stir gently, and cook for another minute before serving.
