Shami Kebab
Spiced minced meat patties with lentils and herbs, pan-fried until golden and crispy outside with a tender filling.

Ingredients
- •500g ground beef or mutton
- •1 cup red lentils (masoor dal)
- •2 onions, finely chopped
- •2 tablespoons ginger-garlic paste
- •2 green chilies, minced
- •1/4 cup fresh coriander, chopped
- •1/4 cup fresh mint, chopped
- •1 teaspoon cumin seeds
- •1 teaspoon garam masala
- •1/2 teaspoon red chili powder
- •1 egg
- •3 tablespoons vegetable oil
- •Salt to taste salt
Directions
- 1Boil lentils with 2 cups water until completely soft, then drain and mash.
- 2Heat oil in a pan, add cumin seeds, then sauté onions until golden brown; set aside half for garnish.
- 3Add ginger-garlic paste and green chilies to remaining onions, cook for 1 minute.
- 4Mix ground meat with cooked lentils, cooked onion mixture, coriander, mint, garam masala, chili powder, and salt.
- 5Let mixture cool slightly, then add beaten egg and mix well until the mixture holds together.
- 6Wet your hands and form mixture into 12-16 oval or round patties.
- 7Heat oil in a shallow pan over medium-high heat and fry kebabs 3-4 minutes per side until golden brown and crispy.
- 8Serve hot with mint chutney, lemon wedges, and sliced onions on the side.
