Sheet Pan Baked Cod with Cherry Tomatoes
Flaky white fish and burst cherry tomatoes come together on one pan for a light, fresh, and restaurant-quality weeknight dinner.

Ingredients
- •4 cod fillets (6 oz each)
- •2 cups cherry tomatoes, halved
- •3 cloves garlic, minced
- •1/4 cup olive oil
- •2 tablespoons fresh lemon juice
- •1 teaspoon dried oregano
- •1/2 teaspoon red pepper flakes
- •to taste Salt and black pepper
- •2 tablespoons fresh basil, chopped
- •1/4 cup Kalamata olives, pitted
Directions
- 1Preheat oven to 400°F and line a large sheet pan with parchment paper.
- 2In a small bowl, whisk together olive oil, lemon juice, minced garlic, oregano, and red pepper flakes.
- 3Spread cherry tomatoes and Kalamata olives on the sheet pan, then drizzle with half of the olive oil mixture and toss to coat.
- 4Arrange cod fillets on top of the tomatoes, season with salt and pepper, and drizzle with remaining olive oil mixture.
- 5Bake for 12-15 minutes, until the cod is opaque and flakes easily with a fork.
- 6Remove from oven, garnish with fresh basil, and serve immediately with lemon wedges.
