Sheet Pan Baked Cod with Cherry Tomatoes

Flaky white fish and burst cherry tomatoes come together on one pan for a light, fresh, and restaurant-quality weeknight dinner.

Ingredients

  • 4 cod fillets (6 oz each)
  • 2 cups cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • to taste Salt and black pepper
  • 2 tablespoons fresh basil, chopped
  • 1/4 cup Kalamata olives, pitted

Directions

  1. 1Preheat oven to 400°F and line a large sheet pan with parchment paper.
  2. 2In a small bowl, whisk together olive oil, lemon juice, minced garlic, oregano, and red pepper flakes.
  3. 3Spread cherry tomatoes and Kalamata olives on the sheet pan, then drizzle with half of the olive oil mixture and toss to coat.
  4. 4Arrange cod fillets on top of the tomatoes, season with salt and pepper, and drizzle with remaining olive oil mixture.
  5. 5Bake for 12-15 minutes, until the cod is opaque and flakes easily with a fork.
  6. 6Remove from oven, garnish with fresh basil, and serve immediately with lemon wedges.
