Sheet Pan Honey Mustard Salmon and Carrots

- •4 salmon fillets (6 oz each)
- •1 lb carrots, sliced into sticks
- •3 tablespoons Dijon mustard
- •2 tablespoons honey
- •2 tablespoons olive oil
- •1 tablespoon apple cider vinegar
- •2 cloves garlic, minced
- •1 teaspoon dried thyme
- •to taste salt and black pepper
- •1 lemon, sliced
Directions
- 1Preheat oven to 400°F and line a large sheet pan with parchment paper.
- 2In a small bowl, whisk together Dijon mustard, honey, olive oil, apple cider vinegar, minced garlic, and dried thyme.
- 3Arrange carrots on the sheet pan, drizzle with half the honey mustard sauce, and season with salt and pepper. Roast for 10 minutes.
- 4Remove sheet pan, push carrots to the sides, and arrange salmon fillets skin-side down in the center.
- 5Brush salmon with remaining honey mustard sauce and season with salt and pepper. Top with lemon slices.
- 6Return to oven and bake for 12-15 minutes until salmon is cooked through and carrots are tender.
- 7Serve immediately, drizzling any pan juices over the salmon and carrots.
