Sheet Pan Honey Mustard Salmon and Carrots

Tender salmon fillets glazed with a sweet and tangy honey mustard sauce, roasted alongside caramelized carrots for an easy, restaurant-quality weeknight meal.

Ingredients

  • 4 salmon fillets (6 oz each)
  • 1 lb carrots, sliced into sticks
  • 3 tablespoons Dijon mustard
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • to taste salt and black pepper
  • 1 lemon, sliced

Directions

  1. 1Preheat oven to 400°F and line a large sheet pan with parchment paper.
  2. 2In a small bowl, whisk together Dijon mustard, honey, olive oil, apple cider vinegar, minced garlic, and dried thyme.
  3. 3Arrange carrots on the sheet pan, drizzle with half the honey mustard sauce, and season with salt and pepper. Roast for 10 minutes.
  4. 4Remove sheet pan, push carrots to the sides, and arrange salmon fillets skin-side down in the center.
  5. 5Brush salmon with remaining honey mustard sauce and season with salt and pepper. Top with lemon slices.
  6. 6Return to oven and bake for 12-15 minutes until salmon is cooked through and carrots are tender.
  7. 7Serve immediately, drizzling any pan juices over the salmon and carrots.
