Sheet-Pan Pizza
A thick, focaccia-style pizza baked in a rimmed sheet pan with a gloriously oily, crispy bottom and a soft, airy crumb — no pizza stone needed. Load it up with your favourite toppings and feed the whole family from one pan.

Ingredients
- •1 store-bought pizza dough ball (900 g / 2 lb)
- •4 tbsp olive oil
- •¾ cup pizza sauce
- •2 cups shredded mozzarella
- •60 pepperoni slices
- •½ green bell pepper, diced
- •1 tsp dried oregano
- •½ tsp garlic powder
- •¼ tsp red chili flakes
- •3 tbsp grated Parmesan
- •¼ tsp flaky sea salt
Directions
- 1Preheat oven to 230 °C (450 °F). Pour 3 tbsp olive oil into a half-sheet pan (33 × 46 cm) and tilt to coat the bottom completely.
- 2Press and stretch the dough into the pan as far as it will go; if it springs back, rest 5 minutes and stretch again until it fills the pan.
- 3Drizzle remaining 1 tbsp olive oil over the dough surface; let rest 10 minutes while the oven finishes preheating.
- 4Dimple the dough all over with your fingertips, then spread pizza sauce evenly to the edges.
- 5Scatter mozzarella over the sauce, top with pepperoni and bell pepper.
- 6Sprinkle with oregano, garlic powder, chili flakes, Parmesan, and flaky salt.
- 7Bake on the lowest oven rack for 18–22 minutes until the cheese is deeply golden and the bottom crust is crispy and brown.
- 8Let cool in the pan for 3 minutes, then use a spatula to lift and slide onto a board before slicing.
💡 Two standard 450 g dough balls pressed together also work if you can't find a larger dough. Peek under the crust at the 18-minute mark — if the bottom is pale, switch to the broiler for 2 minutes.
