Sheet Pan Salmon with Brussels Sprouts

Ingredients
- •4 salmon fillets (6 oz each)
- •1 lb Brussels sprouts, halved
- •3 tablespoons olive oil
- •1 teaspoon garlic powder
- •1 teaspoon paprika
- •1/2 teaspoon salt
- •1/4 teaspoon black pepper
- •1 lemon, sliced
- •2 cloves garlic, minced
- •1 teaspoon Dijon mustard
Directions
- 1Preheat oven to 400°F (200°C) and line a large sheet pan with parchment paper.
- 2Toss Brussels sprouts with 2 tablespoons olive oil, garlic powder, paprika, salt, and pepper, then spread on the prepared sheet pan.
- 3Roast Brussels sprouts for 12 minutes until they begin to soften.
- 4Meanwhile, mix minced garlic, Dijon mustard, and remaining 1 tablespoon olive oil in a small bowl.
- 5Remove sheet pan from oven and push Brussels sprouts to the sides, then place salmon fillets skin-side down in the center.
- 6Brush the garlic-mustard mixture over each salmon fillet and season with salt and pepper; top with lemon slices.
- 7Return to oven and roast for 10-12 minutes until salmon flakes easily with a fork.
- 8Serve immediately while hot.
