Sheet Pan Salmon with Dill and Lemon

Ingredients
- •4 salmon fillets (6 oz each)
- •2 tablespoons olive oil
- •2 lemons
- •3 tablespoons fresh dill, chopped
- •1 pound asparagus, trimmed
- •2 cups baby potatoes, halved
- •1 teaspoon salt
- •1/2 teaspoon black pepper
- •3 cloves garlic, minced
- •2 tablespoons butter
Directions
- 1Preheat oven to 400°F and line a large sheet pan with parchment paper.
- 2Toss potatoes with 1 tablespoon olive oil, salt, and pepper, then spread on one side of the sheet pan and roast for 10 minutes.
- 3Toss asparagus with remaining oil, garlic, salt, and pepper, then add to the sheet pan.
- 4Season salmon fillets with salt and pepper, then nestle among the vegetables and dot with butter.
- 5Slice one lemon thinly and layer on top of salmon fillets, then sprinkle with fresh dill.
- 6Bake for 12-15 minutes until salmon is cooked through and flakes easily with a fork.
- 7Squeeze juice from the remaining lemon over the sheet pan and serve immediately.
