Sheet Pan Salmon with Dill and Lemon

Perfectly baked salmon fillets with fresh dill and bright lemon served alongside roasted vegetables for an effortless weeknight dinner.

Ingredients

  • 4 salmon fillets (6 oz each)
  • 2 tablespoons olive oil
  • 2 lemons
  • 3 tablespoons fresh dill, chopped
  • 1 pound asparagus, trimmed
  • 2 cups baby potatoes, halved
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 cloves garlic, minced
  • 2 tablespoons butter

Directions

  1. 1Preheat oven to 400°F and line a large sheet pan with parchment paper.
  2. 2Toss potatoes with 1 tablespoon olive oil, salt, and pepper, then spread on one side of the sheet pan and roast for 10 minutes.
  3. 3Toss asparagus with remaining oil, garlic, salt, and pepper, then add to the sheet pan.
  4. 4Season salmon fillets with salt and pepper, then nestle among the vegetables and dot with butter.
  5. 5Slice one lemon thinly and layer on top of salmon fillets, then sprinkle with fresh dill.
  6. 6Bake for 12-15 minutes until salmon is cooked through and flakes easily with a fork.
  7. 7Squeeze juice from the remaining lemon over the sheet pan and serve immediately.
