Sheet Pan Salmon with Green Beans Almondine

Ingredients
- •4 salmon fillets (6 oz each)
- •1 lb fresh green beans, trimmed
- •3 tablespoons olive oil
- •1/2 teaspoon sea salt
- •1/4 teaspoon black pepper
- •2 cloves garlic, minced
- •4 tablespoons sliced almonds
- •3 tablespoons unsalted butter
- •1 tablespoon fresh lemon juice
- •1/2 teaspoon Dijon mustard
Directions
- 1Preheat oven to 400°F and line a large sheet pan with parchment paper.
- 2Toss green beans with 2 tablespoons olive oil, salt, pepper, and minced garlic. Spread in a single layer on half of the sheet pan.
- 3Roast green beans for 10 minutes until they begin to soften.
- 4Brush salmon fillets with remaining 1 tablespoon olive oil and season with salt and pepper. Place on the empty half of the sheet pan.
- 5Return to oven and roast for 12-14 minutes until salmon is cooked through and flakes easily with a fork.
- 6While salmon cooks, melt butter in a small skillet over medium heat. Add sliced almonds and toast for 2-3 minutes until golden and fragrant.
- 7Remove from heat and stir in lemon juice and Dijon mustard.
- 8Transfer salmon and green beans to serving plates and drizzle the warm almond butter over the salmon.
