Sheet Pan Salmon with Green Beans Almondine

Perfectly roasted salmon fillets paired with crispy green beans and topped with a buttery almond garnish for an elegant yet simple weeknight dinner.

Ingredients

  • 4 salmon fillets (6 oz each)
  • 1 lb fresh green beans, trimmed
  • 3 tablespoons olive oil
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 2 cloves garlic, minced
  • 4 tablespoons sliced almonds
  • 3 tablespoons unsalted butter
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon Dijon mustard

Directions

  1. 1Preheat oven to 400°F and line a large sheet pan with parchment paper.
  2. 2Toss green beans with 2 tablespoons olive oil, salt, pepper, and minced garlic. Spread in a single layer on half of the sheet pan.
  3. 3Roast green beans for 10 minutes until they begin to soften.
  4. 4Brush salmon fillets with remaining 1 tablespoon olive oil and season with salt and pepper. Place on the empty half of the sheet pan.
  5. 5Return to oven and roast for 12-14 minutes until salmon is cooked through and flakes easily with a fork.
  6. 6While salmon cooks, melt butter in a small skillet over medium heat. Add sliced almonds and toast for 2-3 minutes until golden and fragrant.
  7. 7Remove from heat and stir in lemon juice and Dijon mustard.
  8. 8Transfer salmon and green beans to serving plates and drizzle the warm almond butter over the salmon.
