Shoofly Pie
A classic Pennsylvania Dutch molasses pie with a gooey filling and buttery crumb topping.

Ingredients
- •1 unbaked 9-inch pie crust
- •1 cup all-purpose flour
- •1/2 cup light brown sugar
- •1/4 cup butter
- •1 cup molasses
- •3/4 cup boiling water
- •1 teaspoon baking soda
- •1/2 teaspoon salt
- •1 teaspoon vanilla extract
Directions
- 1Preheat oven to 375°F and place pie crust in a 9-inch pie dish.
- 2Mix flour, brown sugar, and butter with a fork until crumbly to create the crumb topping; set aside.
- 3In a bowl, combine molasses, baking soda, salt, and vanilla extract.
- 4Pour boiling water into the molasses mixture and stir well.
- 5Pour the molasses filling into the unbaked pie crust, then sprinkle the crumb topping evenly over it.
- 6Bake for 35-40 minutes until the filling is set and the crumbs are golden brown.
- 7Cool on a wire rack for at least 30 minutes before serving.
